French Chicken Rillettes: an authentic recipe

These Rillettes are cooked in the Eure (27) in Normandy by Franck, directly on the farm. They are made from slow growing chickens - raised over 15 weeks in the open air and fed on grain from the farm. Shredded by hand, they are well confit in duck fat which gives it a lot of lamb's lettuce and a fruity taste. A melt-in-the-mouth delicacy with a marked taste, which can be eaten on a hot toast, but also with mashed potatoes, a salad ... even with a teaspoon! This 150g format is ideal for 3 to 5 people as an aperitif, or for a quick meal.
