Our yuzu salt is prepared in our workshop using freshly picked citrus fruits from our plantation. The yuzus are zested by hand to ensure the pith — the more bitter part of the fruit — is not removed. The zest and salt are then mixed and dried together, allowing the yuzu to release its flavours and the salt to absorb them.
Our yuzu salt pairs beautifully with fish and shellfish, whether in a marinade or added at the end of cooking to grilled sea bream, fish ceviche, or seared or raw scallops.
You can also use our yuzu salt to flavour a broth or soup, season white meat, or enhance fried dishes such as vegetable tempura or tonkatsu.
Ingredients: Gruissan salt, yuzu zest.
Store in a dry place, away from light.
Yuzu is one of the emblematic citrus fruits of our plantation. You will also find it in other creations, such as our yuzu jam and our artisanal yuzu liqueur, French-style limoncello.
