This 65% cocoa chocolate is infused with the finest citron-mandarin from Viotá, Cundinamarca. It is part of our new creations, where creativity, balanced textures, and harmonious flavors come together.
To make this bar, we transform fine-flavor cocoa beans from the Meta region of Colombia by infusing them—at a controlled temperature—with citron-mandarin peels until we obtain a cocoa liquor. We then add cocoa butter and premium cane sugar, and conche the mixture for around 7 hours to eliminate any remaining astringency or acidity.
Finally, to add a crunchy touch and intensify the aromas, we incorporate citron-mandarin peels directly into the bar during molding.
A unique experience where citrus freshness elevates the depth of Colombian cocoa.
