The Macallan Rare Cask was crafted from American white oak and Spanish oak sherry-seasoned casks. A high proportion of the selected casks were chosen from first-fill barrels, among the most precious and sought-after. Together, these factors were crucial in giving the whisky its rich and splendid color. The Macallan Rare is part of the 1824 series, consisting of whiskies without age statements. Like its four other "small" siblings (Gold, Amber, Sienna, and Ruby), Rare Cask allowed master blender Bob Dalgarno to indulge his desires. He selected the casks for their qualities without having to worry about any age count. Macallan has long refused to give a "false tint" to its whiskies (meaning they have never wanted to alter the natural color by adding artificial coloring). This is why the spirits are chosen based on their aromatic depth as well as their color.
Out of several hundred barrels, including some of the most expensive used in Scotland, according to Bob Dalgarno, only about 1% is selected. The whisky features a very luminous mahogany color and an almost viscous consistency. The first nose offers notes of dried fruit cake, with a hint of cinnamon, white pepper, and allspice, not to mention a taste of dark baking chocolate. The texture is smooth on the palate with an unusual hint (for Macallan) of salt, along with chocolate and spices. A bit of water softens these elements but brings a subtle taste of crème brûlée and refreshing woodiness. The taste is less salty.
